Physical-Chemical Evaluation of Honeys Marketed in Cities in the Alto Oeste Potiguar

Abstract

Brazil is a major world producer of honey due to its flora that is conducive to the experience and production of bees. A major highlight in Brazilian production is the Northeast region, which includes the state of Rio Grande do Norte, which has a large artisanal production of honey. In this perspective, this work aimed to evaluate the physical-chemical quality of honey sold in municipalities in the Alto Oeste Potiguar. For this, the samples were collected in three cities and transported to the IFRN physical-chemical analysis laboratory, for further analysis (water content, ash, pH, acidity, total soluble solids, insoluble solids, diastasis enzyme, color, and dye). It was observed that 36.36% of the samples presented values ​​outside the legislation for the water content parameter, 9% for the ash parameters and 18% presented the absence of the diastasis enzyme. The other results were within the established by the legislation. Finally, it can be concluded that only one sample was fully compliant with Brazilian legislation.
